Suththu Murukku
Suththu murukku or kai murukku, is one of the fast moving snacks in Tamil Nadu. Each region or ethnic communities like Chettinad, for instance have their own style of making murukku. Made popularly during Deepavali, suththu murukku is also prepared during Krishna Jayanthi and as a part of wedding seer bakshanam.
The rice flour with just meager amount of urad dal powder, is made into dough with scarce water carefully added just enough to hold the dough. The dough is held in the palm and medium sized pinch is drawn by the index finger and thumb and the thick thread like dough is drawn in concentric circles from inside to outside in minimum three whirls to ten or more.
Care is take not to dry this too much and is fried immediately and the murukku is ready. Pulling the dough to circles is a matter of dexterity and patience.
Sesame seeds are carefully added to the dough, which again is a matter to be observed especially while frying, so that the murukku does not burst.
