Thattai
Thattai is one of the tricky to make snacks, which is made mainly during Krishna Jayanthi and Deepavali. Though we get thick thattai versions that are not hard to bite, the original version that was popular few decades ago, is slightly hard.
Thattai, is made with rice flour and very meager amount of roasted urad dal powder. Roasting urad dal is carefully done, so that it just removes moisture content and does not become brown. Water is scarcely sprinkled in the flour so that it does not have even a bit of water extra.
Thattai is flattened to paper thickness and immersed in the oil, which again has to be carefully observed, since there is only a thin line between getting cooked and getting roasted dark.
Meanwhile pepper, cumin and sesame seeds are carefully added along with Bengal gram dal, in the right proportion.
Making the right thattai is a pleasure for devoted homemaker and she makes monthly snacks for her family. The shelf life of thattai is two weeks.
