More Kuzhambu Podi
More kuzhambu or buttermilk gravy is an anytime meal delight, especially during summer, thanks to its cooling properties.
Vegetables such as brinjal, ladyfinger, pumpkin, chow chow, root vegetables like potato and seppan kizhangu (colocasia) are added to more kuzhambu. The vegetables are cooked in water with salt and turmeric. Once done, marinated and ground paste of coconut, cumin seeds, tur dal, chillies, ginger is added to it. Sometimes the list is elaborate with pepper, fenugreek seeds, red chilli, curry leaves and coriander leaves finding themselves in the list. The gravy is removed from the stove in one or two boils and let to cool after which buttermilk is added.
More kuzhambu also has an uncooked version, where paste is added to buttermilk, to which cooked vegetables are added. One can also find versions of more kuzhambu in Punjabi and Gujarati kadhi, Karnataka’s Majige Huli and Kerala’s Kaalan.
