Puliyotharai paste
Puliyotharai is a prepared rice or variety rice in South India, which is mostly associated with Iyengar community. There are two types of puliyotharai of which one is the general version and another is kovil puliyotharai or iyengar puliyotharai and is popular prasadam in Vishnu temples.
Also known as puliyogare, it is popular in Karnataka too. Coriander seeds and white sesame seeds are roasted and added to the puli kaichal or tamarind paste, which is not added in the general version.
Even in the general version, while some people season Bengal gram dal, dry red chillies and boil tamarind water till it thickens to a paste, yet others grind roasted Bengal gram dal and dry red chillies and add powder to cooked tamarind paste. Roasted groundnuts are also popularly added to Puliyotharai.
The Karnataka version employs jaggery and roasts coconut gratings, cumin and pepper seeds, which is not found in other recipes.
The shelf life of puliyotharai paste is one to two months.
