Mango thokku
Mango thokku is pickle made from grated mango. Unlike other mango pickles, thokku variety discards the skin and only the flesh is made as pickle.
Kili mukku mango, which gets its name from its long form and beak like edge, is prominently used to make this thokku, though tender mangoes of other varieties are also used. Mango thokku is always made during mango season, when it is freshly available.
If the mango used is about to fruiten, the sweetness is transferred to the thokku as well. There is hardly any marinating period in this pickle variety.
Mango thokku accompanies not only with rice, but also dosa, upma, uthappam and idli as well. Since the pickle is not made in detail and is without usual traditional methods that involve preservation, the shelf life is a month. In refrigerated state, the pickle would last for three months.
