Dhoodh peda
Dhoodh peda traces its origin to Mathura, Uttar Pradesh. Thakur Ram Ratan Singh who migrated to Dharwad, Karnataka from Lucknow in 1850s took peda with him and Dharwad peda evolved. Another version is Kandi peda, popular in Maharashtra. Milk peda is popular by the name palkhova in Srivilliputhur, a Vaishnavite abode in Tamil Nadu.
The thick sweet is made with khoa, sugar and flavoured with cardamom. The traditional method is to simmer thick fat milk for hours together till milk evaporates and thickens to a small dough sized paste. Obviously laborious that it was, it is replaced by condensed milk. Some homemakers use milk powder instead of milk and condensed milk. Dry fruits like almonds and cashews are sprinkled over this sweet.
Dhoodh peda, like other Indian sweets has evolved over the times, with chocolate, coconut and likes of cranberry being added in the recipe, which gives a twist to the tradition. Some even bothered to replace sugar with jaggery. Likewise, heavy bottom vessel which was used to withstand the long hours of heat, is now replaced with non stick vessels and microwave ovens, when the dessert is made at home.
