Wheat Halwa
Halwa is dessert derived from West Asia and the Arabic word means sweet. The first halwa was dates mashed in milk and thereafter anything sweet was known as H-l-w or halwa. The reference is traced as early as 7 AD. What began with corn, rice and dry fruits, reached India associating the sweet with Muslims.
Amidst many halwas including those made from semolina, carrot, moong dal, channa and so on, Tirunelveli, in Tamil Nadu gained fame for its exotic ‘Atta ke halwa’ or wheat halwa. Centuries ago, a zamindar in Tirunelveli hired cooks from Rajasthan to make this sweet and the tradition continues till date.
Wheat halwa is a souvenir which every visitor of Tirunelveli takes home, in huge loads. The taste is attributed to the Tamirabarani river that flows by.
Making wheat halwa is a slow process where ghee does not drain out, but sticks to the sweet’s exterior. Wheat is soaked for more than eight hours and milk is extracted from grinding the soaked wheat which is cooked in slow process over sugar and ghee. Wheat Halwa has a shelf life of two weeks.
