ARISI Koozh VATHAL or ARISI VATHAL–a thick porridge made of Raw Rice, Javvarisi/Sabudana, Jeera, Green Chilly Salt AND Lemon Juice is a popular South Indian fryum variety made during the hot summer months and stored for use during the other seasons.
Let the summer comes and every terrace in the household is filled with this Arisi Koozh Vathal drying in hot sun and peeled once completely dried and stored in tight containers. The mixed ingredient is filled in predesigned mould and pressed to and fro direction.
This fryum is used as a side dish for sambar rice, or any other variety rice and goes well with Rasam Rice.
